How much do I have to spend on a good bread maker?

You can usually find well-known branded products among bread makers from 100 euros. With the solidly manufactured devices in this price range, you can bake larger loaves of bread and usually have a large selection of baking programs available. You get the most comfort and practical additional functions with premium devices for 150 euros and more. The models that are offered for less than 100 euros include usable bargains, some from discount stores, as well as rather inferior imported devices. So this is where you should take a closer look. The top recommendations in the AllesBeste test cost between 85 and 170 euros.

Bread baking machines in the test: how were the products rated?

When selecting the test devices, AllesBeste largely left out smaller machines that can bake a maximum of 750 gram bread. The focus was on machines for breads of between 900 and 1,800 grams. Whole grain and sourdough breads were baked in the test devices. 

For the wholemeal bread, the testers filled in the appropriate amount of the baking mix and assessed the result: the crust, the consistency and the color of the bread. The whole wheat bread mostly turned out well.Sourdough bread poses a greater challenge: the dough has to rest for around half a day at room temperature, ferment and then bake at a high temperature. 

Only one test device had a real program to choose from; other models had to be improvised. The result was mostly disappointing in the test, the loaf wasn’t baked through or had no crust. Only certain bread makers are suitable for making sourdough bread.In addition, AllesBeste checked the processing of the devices, their cleaning and technical details such as the volume during operation and the power consumption. 

For ease of use, it depends on which helpful functions the bread maker has, how easy it is to read the display and how understandable the menu guidance and program selection are. The testers selected three recommendations from all devices and named plus and minus points for all models.

What is a bread maker and how does it work?

If you bake bread occasionally, you first have to mix the ingredients, knead the dough and then put it in the oven. However, if you want fresh bread on the table on a regular basis, it is worth purchasing a bread maker that does everything independently.

You actually only put the right amount of ingredients in the baking pan and let the device knead and bake. A number of programs are available for this, with which the type of bread can be selected, including gluten-free baked goods, for example. You can even schedule many devices so that fresh bread is baked exactly in the morning when you get up or in the evening after work. 

For technical reasons, the dough hooks for the dough leave holes in the bottom of the baked bread. If you remove the hooks between the kneading dough and the baking, there will still be the shafts to which the hooks will be attached. The holes are then at least a little smaller and less noticeable. Transferring the dough is additional work that is somewhat contrary to the purpose of the bread maker. 

Ready mixes for bread are quite cheap, you pay less for your bread per loaf than in the bakery. Of course, you have to factor in acquisition and operating costs. In addition, baking in the bread maker takes several hours, so you cannot satisfy spontaneous cravings with it. In addition, if you do not use a baking mix, but mix the ingredients yourself, you have to pay close attention to the quantities, otherwise the bread will fail quickly.

How well do bread makers cope with sourdough?

Usually the bread maker does the kneading of the dough and the baking of the bread in one go, all you have to do is add the ingredients and press the button. This is difficult with sourdough, because here the lactic acid bacteria have to ferment for up to half a day before the baking process can begin. 

If the bread maker does not have a sourdough program and a sufficiently long time control, you have to knead the dough and bake it in individual steps and it does not make your work much easier compared to baking without a machine.

When kneading the wet and sticky sourdough in the machine, you usually have to help because the flour sticks to the edge of the baking pan and has to be pushed down with the spatula. Only a few bread makers have special stirring hooks for this purpose. 

When it comes to baking itself, the sourdough bread is also a challenge. The dough must initially be baked at a very high temperature to create a nice crust. Machines without their own sourdough program often produce a loaf that has not been baked through, has not risen or has no crust. In the test, only two of 19 models really got along with sourdough bread.

What do I have to look out for when buying a bread maker?

  • Bread sizes
    The available bread makers are suitable for different bread sizes. Compact devices only bake small loaves of bread weighing up to 750 grams, which may not be enough for families, especially since it takes a few hours to prepare the next bread. Medium-sized machines bake at least one kilo loaf, but with the heavier models you can also get 1,800-gram loaves. Ultimately, it depends on your preferences and your requirements for the device.
  • Dough hooks
    machines that make bread up to 1,000 grams usually get by with a dough hook. The double hook can knead larger amounts of dough faster and more thoroughly. For sourdough you also need special stirring hooks that stir the flour from the edge and bottom into the wet, sticky dough. The stirring mechanism leaves holes in the bottom of the loaf. So that these don’t get too ugly, you can remove the hooks before baking so that only the waves remain. For this purpose, it is useful if the dough hooks can be easily removed.

How do I clean and care for the machine correctly?

The baking pan with the dough hook can usually be easily removed from the machine and dismantled. The Teflon or ceramic coating prevents the dough from sticking: the loaf of bread simply slides out after baking. Some of the shafts on which the dough hooks sit are not coated. If necessary, you can rub this with a little oil. 

However, you have to clean the baking pan and dough hook by hand, the non-stick coating is not suitable for the dishwasher. You should also avoid aggressive cleaning agents and steel sponges to protect the coating.As a rule, cleaning with warm water, washing-up liquid and a sponge is sufficient. Rubbing in sunflower oil is also good for the clean baking pan. But even with great care, the coating on the baking pan will eventually be scratched and the bread will stick to it. 

The only thing that can help here is a new baking pan. The rest of the case should usually not get too dirty and can be cleaned with a damp cloth. You have to be careful that water cannot penetrate the keys either, a plastic cover will help here. Some bread makers also offer the option of removing the lid for easier cleaning. But that’s not always the case.

Can I make jam with the bread maker?
